Yas Plaza Hotels is thrilled to announce an innovative and sustainable culinary project at their renowned Italian restaurant, Filini Garden. This new initiative, Il Pane e’ Oro, led by the talented Chef Marco Gattone, transforms leftover bread into delicious, hand-crafted pasta dishes, reflecting the hotel’s commitment to sustainability and minimizing food waste.

In the kitchens of Yas Plaza Hotels, surplus bread from buffets and banquets often faces the fate of being discarded. However, Chef Marco has ingeniously found a way to give this bread a second life by transforming it into delicious pasta. The process begins with the careful selection of the bread, which is then sliced and soaked in water. Once thoroughly soaked, the bread is squeezed to remove excess moisture before flour is added to create the base for the pasta dough. Chef Marco meticulously crafts the dough by hand, ensuring that each batch meets his impeccable standards of quality and taste.

Diners can enjoy these innovative dishes at Filini Garden from Saturday to Thursday, starting at 6 pm. The specials include a variety of pasta options, each paired with a story that adds depth to the dining experience:

Homemade stale bread pasta with your choice of sauce:

  • Puttanesca: A robust blend of tomatoes, anchovies, black olives, capers, garlic, and parsley | AED 75
  • Amatriciana: A savory mix of beef pancetta, tomato sauce, pecorino cheese, and white wine | AED 85
  • Marinara: A classic combination of tomato sauce, garlic, oregano, and basil | AED 65
  • Gnocchi: Made with bread and zucchini (zucchini cream, fried zucchini, grana Padano, parsley and basil | AED 80

Additionally, guests can indulge in Homemade bread gnocchi with zucchini and basil, featuring zucchini prepared in two delightful consistencies: creamy and fried.

To complement Chef Marco’s creations, Filini Garden offers an array of sustainable beverages. The bar team has ingeniously repurposed kitchen surplus into cocktail ingredients, resulting in a unique selection of drinks:

  • Bitter Bourbon Tepache
  • Coffee Negroni cocktail
  • Strawberry Jam Bellini

These cocktails are crafted from upcycled in-house ingredients such as fruits, vegetables, jams, purees, syrups, dehydrated herbs, and peels, showcasing an impressive commitment to reducing waste.
