June 2025, Dubai, United Arab Emirates: Something special is rising at ME by Meliá Dubai this month. For one morning only, on June 17th, the hotel’s signature venue, Central Restaurant, will host an exclusive breakfast experience that brings together two celebrated culinary talents, Chef Bruno Dinel, founder of the award-winning French bakery Au Pain de Mon Grand-Père, and ME by Meliá Dubai’s Executive Chef Biljana Nava Villarreal, the creative force behind ME Dubai’s refined dining offerings.

The one-day-only menu brings together buttery brioches, rustic sourdoughs, and freshly baked French baguettes crafted by Chef Dinel, alongside a vibrant lineup of signature dishes curated by Chef Biljana. Highlights include the best selling Alpha and Omega dish which features Poached Egg Benedict with Avocado and Salmon, indulgent Brioche French Toast, and a rustic take on Huevos Rotos, crispy potatoes topped with eggs and aged dry beef. Designed for both hotel guests and local diners, this elevated breakfast blends time-honoured technique with creative expression to deliver a morning unlike any other.

Flying in from Strasbourg for the occasion, Chef Dinel brings a reputation built on craftsmanship and sustainability. Since founding his family-run bakery in 2002, Au Pain de Mon Grand-Père has become a benchmark for slow-fermented breads and artisan pastries made with Label Rouge flours, organic grains, and Valrhona chocolate. From wood-fired loaves to finely laminated doughs, each item reflects a deep respect for quality and process. Chef Dinel’s accolades include two Guinness World Records, one for the world’s longest tartine (1.6 km) and another for the largest croque monsieur (over 30 sqm), further cementing his reputation as both an innovator and traditionalist.

Complementing the breads is the creative flair of Chef Biljana Nava Villarreal, whose globally influenced plates bring modern energy to the morning table. Her interpretations elevate familiar flavours with bold techniques and refined presentation, reinforcing Central Restaurant’s reputation for thoughtful, ingredient-led cuisine.
